How to Make a Zesty Chicken Tortilla Bake ~ She's back!
Nov 5, 2010 at 0:01 Youngest is back in the kitchen cooking. Hooray! It's so much fun watching her work on some basic cooking skills to build up her confidence in the kitchen. She's doing a great job, too. Look at those mad cutting skills! Fingers are curled in!
The camera and I are tolerated being in the kitchen, sort of - "Oh mom! Really?!" But youngest doesn't make me leave either. ;-) Thanks for another yummy dinner sweetness. I loooooooove yoooooou.
Zesty Chicken Tortilla Bake is the recipe she chose to make and share with you. You might pick up on a "roll-up" theme if you remember her last recipe, Cheese Lovers Pasta Roll-Ups. Enjoy!

Zesty Chicken Tortilla Bake
Kraft Foods
What You Need:
1/2 cup miracle whip dressing
1/2 cup flour
3 cups milk
1 pkg. (8oz.) shredded cheddar cheese, divided
1 and 1/2 lb. boneless skinless chicken breast, cooked, cut into bite size pieces
1/2 cup Thick 'n chunky salsa
1/2 cup chopped fresh parsley
16 flour tortillas (6 inch)
How to make it:
Heat oven to 375 F
Spray baking dish with cooking oil spray
Cook (bake, roast, saute, boil, or brown) 1 and 1/2 lbs boneless skinless chicken breast, then cut into bite size pieces
Mix dressing and flour in medium saucepan with whisk until well blended. Gradually stir in milk. Bring to boil on medium heat, stirring constantly; cook and stir until thickened. Add 1 cup cheese; cook until melted, stirring constantly. Reserve 1 cup sauce.
Stir chicken, salsa and parsley into remaining sauce.
Spoon 1/3 cup down center of each tortilla.
Roll up. This step gets a bit messy. You've been warned.
Place 8 roll-ups, seam-sides down, in a 13x9-inch baking dish coated with cooking spray.
Top with reserved sauce and remaining cheese.
Bake 25 min. or until heated through.
