How to Make Pineapple Ginger Sorbet - An Easy Summer Treat
Jul 13, 2010 at 0:05 Recently, on a humid summer afternoon, I was reminiscing about my time in Hawaii - I lived there for many years. There are times when I miss being in the islands, but especially during the summer. Living in Hawaii you can't help but enjoy the fresh, exotic, polynesian flavors of island foods. Two of my favorite polynesian flavors to mix together are pineapple and ginger. They are especially good when mixed into a cool summertime sorbet. Here's an especially easy way to make Ginger - Pineapple Sorbet.
Ginger Pineapple Sorbet: (Sam Choy's Sampler - Hawaii's Favorite Recipes)
1 Cup Sugar
1/2 Cup Pineapple Juice
1 TBSP fresh lemon juice
1 TBSP fresh ginger, grated
1 Pint Cream
Mix ingredients in a freezer-safe bowl. Place bowl in freezer until frozen.
I leave my bowl in the freezer overnight for a creamy ice cream-like version. After approximately 6 to 8 hours you'll have a "soft serve" version. Toss a couple of pieces of candied ginger on top if you like....I do!

Can't wait for you to try this, too! It's super easy, and so refreshing. I'm a big fan of ginger, so any time I can work it into a recipe I try to. This time it's one of the "star" ingredients.
Can it possibly be that easy? I'm going to try it. I've never mixed pineapple and ginger but it sounds wonderful!

Do give this a try, and let me know how it goes! I use my whisk to mix all the ingredients together, but a good old fashioned wooden spoon should do the trick, too. I"m working on a fat-free version. I'll let you know what happens. :-)
