Slow-Cooked Pork Chops with Spiced Honey and Grapes 

I can't stop myself! I have to tell you about the Slow-Cooked Pork Chops with Spiced Honey and Grapes recipe I discovered after flipping through a new cookbook; green, black, red - recipes for cooking and enjoying california grapes, by Susan Volland. Well, the cookbook is new to me even though it's been sitting on my shelf since May! The kind folks from the California Table Grape Commission provided the cookbook as a gift to attendees at Camp Blogaway this past May. Okay, so cooking isn't the only thing that's slow in my kitchen.

Really, I do adore slow cooking, but you probably figured that out by now since just last week I shared that scrumptious easy-short-ribs-slow-cooker recipe with you. Now here I am passing along another slow-cooking recipe. I didn't make a mistake there either by writing "slow-cooking". Last week was slow-cooker, this week slow-cooking. Pay attention because there could be a quiz. What's really neat about this recipe is that you can make it either way, in the slow-cooker, or by slow-cooking (baking) the pork chops in the oven. It's a two-fer! This time around I decided to give ol' 6 Qts Oval a break (that's the slow-cooker just to be clear) and use the oven - it had slow-cooker envy. And let's not forget about the grapes! When was the last time you baked grapes with your pork chops?? This recipe just had to be tried. Not to mention I had all the ingredients on hand. Hope you enjoy it as much as we did here.

What You'll Need:

2 Tablespoons butter 2 Cinnamon Sticks, Broken in Half
3 Pounds Thick-Cut Pork Chops 3 to 5 Whole Cloves (Instead, I use 1/2 Tablespoon Ground Nutmeg)
4 Tablespoons Flour 1/2 Teaspoon Ground Ginger
1 & 1/2 Cups Red Seedless Grapes     1/2 Teaspoon Salt (I use Kosher Salt)
1/3 Cup Honey 1/4 Teaspoon Black Pepper (I use ground)

 

What You'll Do:

Preheat Oven to 325 degrees F.

Melt butter in a heavy, lidded saute pan or skillet over medium-high heat. Dust the pork with flour and brown slowly in the melted butter. Cook in batches if necessary.

Remove the pan from the heat to prevent the flour from scorching and stir in the grapes, honey, cinnamon, nutmeg (or cloves), ginger, salt, and pepper.

 

I transferred the pork chops from the hot skillet to a baking dish, then followed the directions to make the grape sauce in the heated skillet above. Ladle the spicy honey grape sauce over the pork chops, then cover with foil and bake in the oven for 60 minutes. Serve hot over rice, or pasta. I served mine over couscous with some steamed carrots on the side. Yummy dinner! This would be ideal for a Sunday supper. Enjoy!

 

Below you'll find the slow-cooker variation. I haven't made the recipe this way yet, but I wanted to pass along the option.

Slow-Cooker variation: Brown the pork chops on the stove top and then put them in the slow-cooker with the remaining ingredients. Cook on low for 6 to 8 hours (or according to the manufacturer's instructions) and serve hot.
