Slow Cooker Market Stew for All Seasons
Aug 8, 2010 at 0:05
In the heat of summer I adore being able to use my slow cooker! There's nothing better than tossing in some ingredients, setting the timer, and letting it cook all day. Its so wonderful to come home to a house that smells so yummy, like I've been cooking all day, with virtually no extra heat in the kitchen.
Here's a slow cooker recipe from the National Onion Association that will not only get you through the summer, but it has winter options, too.
Viva la Onion!
Go stock up on some onions and toss this easy recipe into the menu plan this week. You'll be glad you did.

1 - jar tomato-basil pasta sauce (l pound 8-10 ounce jar)
2 - cups low sodium vegetable or chicken broth
1 - tablespoon dried oregano
1/2 - pound boneless, skinless chicken breast, diced (optional)
1/4 - cup minced parsley (optional)
Summer Vegetable Selection:
1 &1/2 pounds assorted bell peppers, trimmed, seeded and cubed
1 - cup fresh corn kernels

In a 5 or 6-quart slow cooker, combine onions, pasta sauce, broth, oregano, and the vegetable selection of choice. Add chicken, if desired. Stir the ingredients until mixed well and coated in sauce. Cover slow cooker with lid and turn to low setting for 5 to 7 hours or until tender. If desired, add parsley just before serving.
