Cheese-lover's Pasta Roll-ups ~ Meatless Monday ~ Look Who's Cookin'

 

Look who's cookin' for us on a Meatless Monday! Thats right! It's the Youngest Daughter jumping into the kitchen. I can't tell you how wide my smile was when I walked into the kitchen to find her busy in the one room in the house that she's resisted for a very long time. Youngest is finding out just how much pleasure there is in cooking up a meal for her loved ones. Not only did Hubby and I benefit from this lovely little meal, but so did Youngest's  boyfriend, Bruce - not his real name, but it sure will make him smile - sorry, inside joke, which I know can be rude, so I'll move on. Bruce is fairly new to the family circle, but we like him, so we're being on our best behavior around here. 

Here's this week's Meatless Monday Meal! And yes, for those of you who are fond of Meat-Lovers Mondays don't worry, it will return. You know me better than that. Although I have to say Hubby and I are likin' the healthy meatless Monday idea. Leave it to the younger generation to teach us old dogs some new tricks! Enjoy!

Cheese-lover's Pasta Roll-ups
Kraft Food & Family Magazine - Holiday '09

Prep: 25 Min.  Total: 1 hour 15 Min.

Makes 8 servings, 2 roll-ups each

What you'll need:

1 Egg, beaten

1 Container (15 oz) Ricotta Cheese

2 Cups 2% shredded Italian Three Cheese Blend

4 Green Onions, chopped

1 TBSP Italian Seasoning

1 Jar (26 oz) spaghetti sauce, divided

16 Lasagna noodles, cooked

1/4 Cup Grated Parmesan Cheese

What you'll do:

Heat Oven to 375 degrees

Mix first 5 ingredients until well blended

Spread 1/2 cup spaghetti sauce onto bottom of 13x9-inch baking dish

Spread each noodle with 3 TBSP cheese mixture; rolll up

Place, seam-sides down, in dish

Top with remaining sauce and Parmesan; cover (used foil)

BAKE: 40 to 50 minutes or until heated through, uncovering the last 10 minutes

YOUNGEST'S NOTES:

* Make sure you prep everything in advance so that as soon as the noodles are fully cooked you can prepare the pasta roll-ups. If you don't then you risk ripping your noodles because they will stick together.

* Pour sauce on edges of pasta noodles to help them stay moist throughout the baking process.

* Two roll-ups and a salad are very filling.

MAKE AHEAD TIPS

Assemble as directed; cover with heavy-duty foil. Refrigerate up to 24 hours, then bake, covered, 1 hour 5 min. or until heated through, uncovering the last 10 min. Or, freeze up to 1 month. When ready to serve, thaw overnight in refrigerator. Bake, covered, 1 hour 5 min. or until heated through, uncovering the last 10 minutes.
