Welcome to a Nestlé USA Celebration here on Dishin' In The Kitchen! Over this Labor Day weekend the Kitchen Crew and I will be bringing you not one, but two podcast interviews related to and about Nestlé USA Test Kitchen! Check in throughout this holiday weekend as we share with you some favorite recipes from the Nestlé Test Kitchen Director, Chris Garboski, and Nestlé Food Blog. On Monday, September 6th, I'll be taking you into the Nestlé Test Kitchen for a quick visit, and I'll have another podcast episode to share with you. If that weren't all exciting enough, starting today we've got our very first Giveaway!

I'm especially thrilled to be able to introduce you to a very special foodie, Chris Garboski, Head of the Nestlé USA Headquarters Test Kitchen! It's meeting folks like Chris that make what I already love doing here on Dishin' In The Kitchen even more enjoyable. It is no easy task to be a mother of triplets, work full-time, and manage to still find time to cook for your family, but Chris does it! She works diligently every day to practice the principles of nutrition, health and wellness, which are a fundamental part of the Nestlé USA philosophy: "Good Food, Good Life”.  Chris is an inspiration to me. She's certainly been a great model of healthy living, and so supportive of my efforts here on Dishin' In The Kitchen. I've had so much fun getting to know her better as we've worked through the process of her interviews and choosing which recipes we thought you would most enjoy. Be sure to listen to my interview with Chris by clicking on the Podcast Player above. Stick around long enough to find out what Nestlé-enhanced recipe Chris likes having on her birthday (you can find the recipe below), and which food item Chris would choose to have with her if she were stranded on a desert island...you just might be surprised.

Not only was Chris gracious enough to agree to an interview, but she and Nestlé USA offered to provide two gift baskets (yes, TWO) for one lucky duck to win in my very first Giveaway here on Dishin' In The Kitchen! One gift basket contains "Best of Nestlé", the second is filled with "Healthy Choice Nestlé". It's the best of both worlds! Thank you Chris, and thank you to the generous folks from Nestlé USA! Good luck everyone!

*Disclaimer: I was not paid by Nestlé for this interview or post. I did recieve a few Nestle products, but they are not being reviewed here, nor did those products influence this post. My statements are my honest thoughts and opinions. I did not recieve any gift baskets - these baskets pictured below are for the winner of the Giveaway! Nestle offered to sponsor this giveaway and I accepted their generousity to pass along to you our readers. ENJOY!

WONKA WATERFALL CHEESECAKE WITH SALTED CARAMEL SAUCE

For a printer-friendly, text-only version of the recipe, click here.

Estimated Times
Preparation Time: 25 mins
Cooking Time: 50 mins
Cooling Time: 3 hrs refrigerating

Servings: 16

CRUST

1 1/4 cups graham cracker crumbs
1/4 cup granulated sugar
1/4 cup (1/2 stick) butter or margarine, melted
1 (3.5 ounces) WONKA Exceptionals Chocolate Waterfall Bar, divided

CHEESECAKE
2 packages (8 ounces each) cream cheese, at room temperature
3/4 cup granulated sugar
2 teaspoons vanilla extract
2 large eggs

TOPPING
1 cup sour cream
2 tablespoons granulated sugar
1 teaspoon vanilla extract

SALTED CARAMEL SAUCE
1/3 cup water
3/4 cup granulated sugar
2/3 cup heavy whipping cream
Pinch sea salt

Directions

PREHEAT oven to 350° F.

FOR CRUST:
COMBINE
graham cracker crumbs, sugar and butter in medium bowl. Press onto bottom of 9-inch springform pan or 9- to 10-inch deep-dish pie plate. Bake for 5 minutes. Finely chop half of chocolate bar and sprinkle evenly over crust. Set aside remaining half of chocolate bar for chocolate curl garnish.

FOR CHEESECAKE:
BEAT
cream cheese and sugar in large mixer bowl until fluffy. Beat in vanilla extract. Beat in eggs one at a time, beating well after each addition. Pour filling into crust.

BAKE for 30 minutes or until center is almost set and edges just begin to crack. Remove from oven and quickly put together topping.

FOR TOPPING:
COMBINE
sour cream, sugar and vanilla extract in medium bowl; mix well. Spoon topping over cheesecake, starting with the edges first and working inward toward the center. Bake for 5 minutes. Remove from oven and cool on wire rack. Refrigerate for several hours or overnight.

FOR SALTED CARAMEL SAUCE:
COMBINE
water and sugar in medium saucepan. Heat over low heat, stirring frequently, until sugar is dissolved. Increase heat and boil, without stirring, until syrup is deep amber in color (occasionally brush down sides of pan with wet pastry brush and swirl pan). This should take about 8 to10 minutes. Reduce heat to low; add whipping cream and salt (mixture will bubble vigorously). Whisk until smooth, then pour into serving pitcher; cover and refrigerate until ready to use.

TO SERVE: Gently run knife around inside of springform pan to loosen cheesecake. Remove side of springform pan. With vegetable peeler, shred remaining chocolate bar half around perimeter of cheesecake. Cut cheesecake into 16 wedges. Drizzle bottom of dessert plates with a little caramel sauce; top with piece of cheesecake. Drizzle with additional sauce.
